Hurry-Up Burrito

Ingredients:
  • 1 cup cooked rice
  • 400 gram tin of kidney beans (drained)
  • 1 cup corn niblits
  • 1 cup of your favourite salsa
  • 10 tortillas
  • 1 cup grated cheese
In a microwave dish or a saucepan, mix and heat the rice, kidney beans, corn and salsa. Stir until hot. Divide bean mix evenly on torillas. Sprinkle with cheese. This makes 10 tortillas. Freeze the leftovers.

Cheese Strata

Ingredients:
  • 8 slices of bread
  • 2 eggs
  • 2 cups low-fat milk (or soy milk)
  • 1-2 cups of grated cheese
  • 2 teaspoons of prepared mustard (any variety or chutney)
Cover the bottom of a 24 cm square-baking dish with 4 clices of bread "buttered" with mustard. Cover with grated cheese. Beat eggs and milk. Place remaining bread slices over cheese and pour egg mix over all. Cover and let sit in the fridge for 3-24 hours. Bake 170 degrees (C) for 35 minutes. Let set for 5-10 minutes before serving.

You can change the flavour with the cheese in the middle and add tuna or cooked mince, sliced tomatoes or olives. Be creative!
